Sirloin is taken from the middle of the back section, cut to exacting standards by our skilled butchers. It’s a classic cut that works well with hearty rich sauces. Our Dexter beef sirloin steak is fine-grained and well-marbled coupled with a generous swathe of sweetly flavoured fat. A really satisfying steak with a robust flavour matured on the bone for a minimum of 30 days using a traditional dry-aging process for extra tenderness.

Castlescreen Dexter Farm is certified by the Pasture Fed Livestock Association ensuring our Dexter cattle are raised only on pasture, 100% of the year, WITHOUT any artificial fertilisers or pesticides. The grass diet produces flavourful fats that are also healthier and meat that is naturally high in valuable nutrients that include zinc and iron, phosphorous, potassium, and sodium. Our Dexter beef is also high in beta-carotene, vitamin E, catalase, glutathione, and superoxide dismutase, which are all good anti-oxidants.
